Paperbark and Juniper Berry Smoked Oysters

  • 1 dozen Cole Bros Oysters
  • 100 gm paperbark (Bush Food) Food grade paperbark is sold in a roll, cut the paperbark into 2cm width slices (approximately 3 or 4)
  • 1 Tablespoon of whole dried Juniper Berries
  • 50ml Olive oil (approx)

Heat oil in a frying pan.
Scatter the Juniper Berries into the pan.
Pull apart the paperbark and scatter on to the pan on top of Juniper Berries.
Place oysters on top of the paperbark.
Place a lid on the frying pan.
Check every few minutes until smoked to perfection.
Serve immediately.

Oysters Natural with a Bloody Mary shot

  • 1 dozen Cole Bros Oysters
  • 250 ml vodka
  • 375 ml tomato juice
  • 1 dash Worcestershire sauce, to taste
  • 1 dash tabasco sauce, to taste
  • 1 pinch celery salt, to taste
  • 1 dash lemon juice, to taste

Prepare Bloody Mary and pour into 1 dozen shot glasses. One for each oyster.
Oysters can remain in the half shell, however some like to add their oyster to the Bloody Mary. Do whatever suits you.

Steamed Oysters with Ginger, Corriander & Soy

  • 1 dozen Cole Bros Oysters
  • 1 Tablespoon of fresh ginger julienne (chopped into fine sticks)
  • 1 Tablespoon of fresh corriander chopped
  • 1 Tablespoon of spring onion finely chopped
  • 3 Tablespoon of soy sauce (approx)
  • 4 Tablespoons of hot oil (Note – needs to be very hot, handle with care)

Place oysters on a plate and sprinkle with fresh ginger and a splash of soy sauce
Steam gently in a microwave 20 to 30 seconds (this will depend on how powerful your microwave is) you only want to half cook the oysters.
Remove from microwave, sprinkle with fresh spring onions.
Carefully drizzle hot oil over the steamed oysters.
Serve immediately
